Quick answer: Pans hold about the same batter when their areas match. A 9-inch round (63.6 sq in) is close to an 8×8 square (64 sq in). Two 9-inch rounds (127 sq in) are close to one 9×13 (117 sq in).

Match the area, then the depth

Pans hold about the same batter when their areas match. A 9-inch round (63.6 sq in) is close to an 8×8 square (64 sq in). Two 9-inch rounds (127 sq in) are close to one 9×13 (117 sq in). If the new pan is deeper, lower the oven by about 25°F and bake longer; if shallower, check early.

Worked example

A recipe for an 8-inch round (50.3 sq in) moved to a 9-inch round (63.6 sq in) needs 63.6 ÷ 50.3 = 1.26 times the batter. Use the recipe scaler with that factor.

Frequently asked questions

Can I bake a 9-inch round recipe in an 8×8 pan?

Yes: the areas are nearly the same (63.6 vs 64 sq in).

Can I use a 9×13 instead of two 9-inch rounds?

Yes. The areas are close; bake a little longer and test with a skewer.

How do I measure a pan?

Measure across the top inside edge, not the outside or the base.
